Vegan Broccoli Cheese Soup

Treviso and Rainbow Chard Sauté

Broccoli, florets (4 cups)

Onion, chopped (1 pc)

Garlic, minced (2 cloves)

Olive Oil (1 tbsp)

Vegetable Broth (3 cups)

Vegan Bechamel Cheese Sauce

Serves 2

  1. Heat a large saucepan with oil over medium-high heat and add onion and sauté until soft.

  2. Stir in garlic and cook for till it starts browning. Add broccoli florets stir to coat, add vegetable broth and bring to a boil. Reduce heat to simmer for 5 minutes until broccoli is tender.

  3. Take half the broccoli soup and pulse in a blender.

  4. Return the blended soup to the saucepan along with the cheesy sauce and cook stirring until thickened. Serve and enjoy!
