Pan Seared Paneer with Sweet Corn & Thyme Roots

A2 Milk Paneer (4-5 wedges) ‡
Sweet Corn on the Cob (1 pc) ‡
Carrots, sliced long (2 pcs) ‡
Parsnips, sliced long (2 pcs) ‡
Fresh Thyme (1 sprig) ‡
A2 Ghee (2 tbsp) ‡
Sea Salt, to taste
Black Pepper, to taste

First remove the husk of the sweet corn and boil in water on high heat till ready to eat.
Simultaneously heat 1 tbsp of a2 ghee on a frying pan and cook the parsnips and carrots together till slightly brownish adding thyme, salt and pepper to taste.
Once those are done to the desired tenderness remove and plate from the pan. Return the pan to the heat and add another ½ to 1 tbsp of ghee and then pan sear the paneer wedges adjusting seasoning to taste until golden brown on both sides.
Plate everything together and serve!
