Focaccia Veggie, Chili Jam and Sun-dried Tomato Pesto Sandwich

Ingredients

  • Focaccia Bread, sliced, toasted (4 pcs)

  • Red Bell Pepper, sliced

  • Yellow Bell Pepper, Sliced

  • Onions, Sliced

  • Red Bell Pepper Chili Jam

  • Sun-dried Tomato Pesto

  • A2 Ghee

Method

Serves 2

  1. Heat the ghee in a skillet and add the onions and cook till slightly translucent. Proceed to add the bell peppers and continue to cook adding chili flakes, salt and pepper to taste. Once done to desired level, set aside.

  2. Take the focaccia sliced and toast the plain side with a2 ghee on the same skillet till golden brown.

  3. Layer the chili jam on one side and the sundried tomato pesto on the other and fill with the pan roasted veggies.

  4. Serve and Enjoy!
