Ginger Garlic Pok Choi Stir-Fry

Sun-dried Tomato & Pumpkin Sauce Stuffed Bittergourd

  • Young Pok Choi, quartered lengthwise (500 g)

  • Leeks, halved and chopped (1 pc)

  • Onion, finely chopped (1/2 pc)

  • Coconut Oil (2 tbsp)

  • Ginger, peeled and cut like matchsticks lengthwise (1 pc)

  • Garlic, thinly sliced (2 cloves)

  • Soy Sauce, (3 tbsp)

  • Lemon, juiced (1 pc)

Serves 2

  1. Heat the oil in the wok on medium to high heat and once warm enough add the leeks, ginger and onion and cook for a minute. Add in the garlic and cook together to create a fragrant mixture.

  2. Add in the pok choi and cook the mix further till the pok choi starts browning and then add the soy sauce and cover with a lid and steam for 1-2 minutes.

  3. Remove from the heat and add in the lime.

  4. Plate and Serve!
