Snow Pea & Broccoli Stir Fry

Seasonal Fruit Bowl with Mango Vinaigrette

Ingredients

  • Snow Peas (1/2 cup)

  • Broccoli, cut into florets

  • Miso Dressing, to taste

  • Red Bell Peppers, sliced (1 pc)

  • French Beans (1/2 cup)

  • Onions, diced (1 pc)

  • Spring Onions, chopped (1 pc)

  • Lemon, juiced (1 pc)

  • Coconut Oil (1 tbsp)

  • Salt, to taste

  • Pepper, to taste

  • Sesame Seeds (1 tsp)

Method

Serves 2

  1. Heat the coconut oil on a skillet and proceed to sauté the onions, broccoli, bell pepper for 6-8 minutes adding salt and pepper to season.

  2. Reduce the heat to medium and add the snow peas and French beans as well as the miso dressing and continue to cook till the sauce thickens and the veggies are well coated.

  3. Remove from the heat and stir through the sesame seeds, spring onions and lemon juice and plate on a bed of rice.

  4. Serve and enjoy!
