Mozzarela & Warm Cherry Tomato Salad

Seasonal Fruit Bowl with Mango Vinaigrette

  • Fresh Mozzarella

  • Cherry Tomatoes, halved

  • Onions, chopped

  • Mixed Microgreens

  • Lemon Oil Dressing

  • Salt, to taste

  • Black Pepper, to taste

  • Olive Oil

Serves 2

  1. Warm a small amount of olive oil in a skillet and start to cook the diced onions until they start softening about 10 minutes or so. Add the halved cherry tomatoes and pan sear till they start reducing as well adding the lemon oil dressing and stirring through whilst cooking.

  2. Once done set to one side. Optionally you can also pan sear the mozzarella for a few seconds in the same skillet to soak up the flavour. Mix the mozzarella, cooked mixture and mixed microgreens together and then drizzle with some lemon oil dressing.

  3. Plate and serve!
