Tandoori Paneer Tikka
Capsicum, diced (3 whole – red, yellow and green)‡
Cottage cheese, cut into large cubes (500 g)‡
Onions, cut into wedges (2 onions)‡
Hung curd (3 tbsp)
Garam masala (1 tbsp)
Red chili powder (1 tsp)
Turmeric (1 tsp)
Fresh Ginger & Garlic - (2 tbsp)‡
Mustard oil (1 tbsp)‡
Lemon juice (1 tbsp)‡
Chickpea flour (1 tbsp)
Fresh coriander, chopped (1 tbsp)‡
Salt, to taste
Pepper, to taste
Mustard oil, for frying‡
12 satay sticks

Gather all the ingredients. Process all vegetables.
For the marinade:
Mix all ingredients well.
Marinate the cottage cheese for 30 minutes.
For the skewers:
Thread the satay sticks with alternating bell peppers, onions and cottage cheese.
In a non-stick pan over medium heat, heat 10 ml mustard oil to smoking point and sear the skewers on the pan for about one minute on each side, until vegetables are cooked.
Serve hot with mint yogurt chutney.
