Kimchi Fried Rice

Seasonal Fruit Bowl with Mango Vinaigrette

Ingredients

  • Jasmine Rice or Brown Rice, cooked (1 cup dry)

  • Carrot, chopped (2 pcs)

  • Green Peas, de-shelled (1/2 cup)

  • Shiitake Mushrooms, sliced (1 cup)

  • Kimchi, (2/3 cup)

  • A2 Ghee (1 tbsp)

  • Olive Oil (1 tbsp)

  • Spring Onion Greens, sliced (2 pcs)

  • Soy Sauce, to taste

  • Garlic, Chopped (2 cloves)

Method

Serves 2

  1. In a large deep skillet melt the ghee and oil and add the mushrooms and cook evenly on both sides for 4-5 minutes. Add the garlic and continue to cook for another 2 minutes.

  2. Add the carrots, peas, kimchi along with soy sauce to taste and continue to cook for another 3-4 minutes. Add the cooked rice to the pan and mix well together.

  3. Garnish with the spring onions and serve!
