Garlic Miso Shiitake Mushrooms

Seasonal Fruit Bowl with Mango Vinaigrette

  • Shiitake Mushrooms, sliced long (1-2 cups)

  • A2 Ghee (1-2 tbsp)

  • Garlic, minced (4 cloves)

  • Miso Dressing

  • Spring Onions, for garnish

Serves 2

  1. Start by coating the sliced shiitake mushrooms in the miso dressing and marinating for 30-45 mins.

  2. When ready to cook start by warming the ghee in a wok or skillet and adding the minced garlic. Cook until golden brown and the flavour has infused.

  3. Add the shiitake and cook till desired texture and darkened color (about 5-6 minutes) and finally add some of the minced spring onions just to finish.

  4. Plate and Serve!
