Papaya, Mango & Kiwi Protein Smoothie Bowl

Seasonal Fruit Bowl with Mango Vinaigrette

Ingredients

  • Rolled or Steel Cut Oats, Cooked (3-4 tbsp uncooked)

  • Papaya, diced (1 cup)

  • Kiwi, diced (2 pcs)

  • Mango, diced (1/2 cup)

  • Peanut Butter (1 tbsp)

  • Seed Mix (Chia, Flax, Sunflower, Pumpkin)

  • Vegan Protein Powder (Chocolate)

Method

Serves 2

  1. Once the oats are cooked through and still warm add the protein powder so that it dissolves and mixed well with the oats. Set aside.

  2. Put the diced papaya, kiwi and mangoes in a food processor and pulse till blended but thick and not liquid.

  3. Mix the protein oats and blended fruits well together and place in a freezer for about 40-60 minutes till it cools and thickens.

  4. Remove and top with the seed mix and peanut butter.

  5. Serve and Enjoy!
