Christmas Veggie Roast

Green Winter Salad


  • Potatoes, medium sized, halved (750 g)

  • Sweet Potatoes, chunks (500 g)

  • Yellow Carrots, chopped into 2 inch pieces (500 g)

  • Broccolini, florets (1 cup)

  • French Beans, halved (500 g)

  • Fresh Thyme, minced

  • Fresh Rosemary, minced

  • Garlic, chopped (5 cloves)

  • Olive Oil (3 tbsp)

  • Black Pepper, ground (to taste)

  • Salt (to taste)

Serves 4

  1. Preheat oven to 200 degrees Celsius.

  2. In a large bowl toss together potatoes, sweet potatoes, carrots with 2 tbsp of olive oil, rosemary, thyme and season with salt and pepper.

  3. Spread onto a baking sheet and roast in the oven for about 20-25 minutes.

  4. Toss the green beans and broccolini florets with the remaining olive oil along with the garlic, herbs and salt and pepper and add to baking sheet with other veggies and roast everything for another 20 minutes till slightly brown and tender.

  5. Serve and enjoy.
