Watermelon Gazpacho

Treviso and Rainbow Chard Sauté


  • Watermelon, diced and pureed (10 cups)

  • Red Bell Pepper, diced (2 Pcs)

  • Tomatoes, diced (1 cup)

  • Cucumber, diced (1 cup)

  • Red Onion, diced (1/2 cup)

  • Coriander (1/2 cup)

  • Mint (1/2 cup)

  • Jalapeno (1 pc)

  • Garlic (2 cloves)

  • Olive Oil (2 tbsp)

  • Lemon, juiced (1 pc)

  • Cumin (1/2 tsp)

  • Mustard Micro-greens, for garnish

  • Black Pepper, to taste

  • Salt, to taste

Serves 4

  1. Reserve a small portion of the diced cucumber, tomato, red onion, and coriander, mustard micro-greens for a garnish.

  2. Simply mix all ingredients in a bowl and then add all ingredients into your food processor/blender and blend until smooth.

  3. Garnish and serve immediately or keep chilled in refrigerator.
