Avocado, Quinoa & Pear Salad

Treviso and Rainbow Chard Sauté

Avocado, ripe & chopped (2 pcs)

Cherry Tomatoes, halved (1 cup)

Pears, chopped (2 pcs)

Cucumbers (Seedless), diced (1 cup)

Cilantro, chopped (1/2 cup)

Leek, chopped (1/4 cup)

Lemon, juiced (3 pcs)

Organic Coconut Oil (2 tsp)

Garlic, chopped (1 clove)

Quinoa, cooked (2-3 cups)

Salt, to taste

Black Pepper, to taste

Spiced Apple Cider Vinaigrette, to taste

Serves 2

  1. Whisk lime juice, oil, chopped garlic, salt and pepper in a medium bowl.

  2. Add quinoa, avocados, pears, cherry tomatoes, cucumber, cilantro and leek. Stir gently until combined and add spiced vinaigrette if desired and serve!
