Creamy Broccoli & Apple Salad

Treviso and Rainbow Chard Sauté

Broccoli, florets (4 cups)

Carrots, shredded (1/2 cup)

Onion, diced (1/4 cup)

Red Apples, chopped (2 pcs)

Green Apples, chopped (2 pcs)

Candied Walnuts (1/4 cup)

Dried Cranberries (1/4 cup)

Vegan Mayonnaise (2 tbsp)

Hung Curd Dip (3 tbsp)

Honey Mustard (2 tbsp)

Serves 2

  1. Lightly blanche the broccoli florets and then once cool combine with the carrots, onion, red and green apples, candied walnuts and dried cranberries in a large bowl.

  2. Whisk the vegan mayo, hung curd dip and honey mustard together and add to the bowl.

  3. Toss to coat and serve chilled!
