Water Chestnut Stir Fry (V) (GF)

Sesame or olive oil (3 tbsp)
Water Chestnuts, peeled and sliced (2 cups) ‡
Garlic, peeled and finely chopped (3 cloves) ‡
Pok Choi, sliced (500 g) ‡
Mushrooms, sliced (200 g) ‡
Red Capsicum, sliced (1 whole) ‡
Vegan Satay Sauce (200 g) ‡

Heat the oil in a large wok until hot, then add the water chestnuts and stir fry for one minute.
Add the garlic, pok choi, mushrooms, and capsicum and continue stir frying for another 5 minutes, until the vegetables are almost cooked.
Stir in the vegan satay sauce and cook for another 2 minutes. Serve hot.
