Water Chestnut Stir Fry

Sesame or olive oil (3 tbsp)

Water Chestnuts, peeled and sliced (2 cups)

Garlic, peeled and finely chopped (3 cloves)

Pok Choi, sliced (500 g)

Mushrooms, sliced (200 g)

Red Capsicum, sliced (1 whole)

Vegan Satay Sauce (200 g)

Serves 4

  1. Heat the oil in a large wok until hot, then add the water chestnuts and stir fry for one minute.

  2. Add the garlic, pok choi, mushrooms, and capsicum and continue stir frying for another 5 minutes, until the vegetables are almost cooked.

  3. Stir in the vegan satay sauce and cook for another 2 minutes. Serve hot.
