Sweet Potato Fries (V) (GF)


Water Chestnut Stir Fry

Ingredients

Sweet Potatoes (2 large)

Olive oil (2 tbsp)

Fresh Rosemary, minced (2 tbsp)

Salt and freshly ground pepper, to taste

Method

Serves 4

  1. Preheat the oven to 220 degrees Celcius.

  2. Wash the sweet potatoes and peel off their skins. Cut into french fry-sized wedges (as evenly sliced as possible).

  3. Optional step: soak the potato wedges in a bowl of cold water for 30 minutes (or up to overnight) to remove the starch for crispier wedges. Then rinse, drain, and pat dry very well.

  4. Toss the wedges with olive oil, rosemary, and pepper in a large bowl until the pieces are evenly coated.

  5. Arrange on a baking sheet and bake in the oven until tender, about 20 to 30 minutes. Flip the wedges half way through baking so they cook evenly.

  6. Let cool for five minutes, then sprinkle with salt before serving.

Note: If you have an air fryer, you can also follow your fryer's directions to cook the wedges after step 4.
