Kale & Roasted Cauliflower Salad

Cauliflower, florets (2 cups)

Kale, ribbed and chopped (1 bunch)

Onion, thinly sliced (1 pc)

Honey Mustard (3 tbsp)

Feta Cheese (1/3 cup)

Raisins (1/3 cup)

Pine Nuts (1/3 cup)

Coconut Oil (2 tbsp)

Serves 2

  1. Toss cauliflower florets with coconut oil and salt and pepper to taste. Place on a baking sheet and roast at 200C for about 25 minutes till tender and slightly golden.

  2. Toss the kale with the honey mustard and let rest in the mixture.

  3. Add the cauliflower, onions, feta, raisins and pine nuts and toss together till well combined and serve!
