Method

Makes 36 cookies

  1. Cream butter and sugar in a large bowl until light and fluffy. Break eggs into a separate bowl and whisk. Stir into butter-sugar mix. Mix in Citrus Marmalade.

  2. Sift the flour, baking soda and sea salt together, then stir slowly into the butter mixture until just combined. Cover bowl and refrigerate for 1-2 hours until mixture is chilled.

  3. In the meantime, prepare icing by combining zests, juices, melted butter and sea salt in a bowl. Whisk in the confectioners' sugar until the icing is smooth. Cover and set aside.

  4. Preheat oven to 150 degrees Celcius or 300 degrees Fahrenheit. Line a few sheet pans with baking paper. Use a couple of teaspoons to drop walnut sized dollops of the dough onto the pans, spaced about 3 inches apart.

  5. Bake cookies for 20 minutes, until golden brown. Remove from oven and allow to cool completely.

  6. Once cool, ice the cookies with your icing using a butter knife or small spatula.
