Butter-head, Green Apple & Beet Salad

Green Apples, crescents (2 pcs) ‡
Beetroot, peeled, chopped, soft boiled (3 pcs) ‡
Arugula (1/2 cup) ‡
Baby Spinach (1/2 cup) ‡
Butter-head Lettuce (1 head) ‡
Apple Cider Vinegar (2 tbsp) ‡
Walnuts, crushed (3-4 tbsp)
Salt, to taste
Black Pepper, to taste

Chop the apples into crescents leaving the skin on. Soft boil the beetroots and then cut into 1-inch pieces. Place into a bowl together.
Add the arugula, baby spinach, butterhead lettuce shreds, crushed walnuts into the bowl and pour over with 2 tbsp of acv and add salt and pepper to taste.
Toss the contents and serve!
