Butter-head, Green Apple & Beet Salad

Green Apples, crescents (2 pcs)

Beetroot, peeled, chopped, soft boiled (3 pcs)

Arugula (1/2 cup)

Baby Spinach (1/2 cup)

Butter-head Lettuce (1 head)

Apple Cider Vinegar (2 tbsp)

Walnuts, crushed (3-4 tbsp)

Salt, to taste

Black Pepper, to taste

Serves 2

  1. Chop the apples into crescents leaving the skin on. Soft boil the beetroots and then cut into 1-inch pieces. Place into a bowl together.

  2. Add the arugula, baby spinach, butterhead lettuce shreds, crushed walnuts into the bowl and pour over with 2 tbsp of acv and add salt and pepper to taste.

  3. Toss the contents and serve!
