Sun-dried Tomato & Gruyere Pasta

  • Gluten Free Spaghetti (your choice)

  • Sun-dried Tomato Pesto (4 tbsp)

  • Grainy Gruyere Cooking Cheese, grated (1/2 cup)

  • Mushrooms, sliced (1/2 cup)

  • Garlic, chopped (2 cloves)

  • Onion, chopped (1/2 pc)

  • Olive Oil (1 tsp)

  • Salt, to taste

  • Pepper, to taste

Serves 2

  1. Boil the spaghetti adding salt to taste in a deep vessel and once done drain and set aside.

  2. Taking a deep skillet add olive oil and then onions and cook till slightly tender and then add in the garlic and cook till lightly golden.

  3. Add the sliced mushrooms and cook well, stirring often. Turn the heat off and add the sun-dried tomato pesto, grated cooking gruyere and black pepper and toss and mix well together.

  4. Add the spaghetti and mix well together and serve with a garnish of grated gruyere.
