Baby Carrot and Kale in A2 Ghee

Ingredients

  • Baby Carrots (1 bunch)

  • Curly Kale, loosely shredded (1 cup)

  • A2 Ghee (1-2 tbsp)

  • Thyme, fresh (1/2 tsp)

  • Sea Salt, to taste

  • Black Pepper, to taste

Method

Serves 1

  1. Heat 1 tbsp of ghee on medium heat in a pan. Add the thyme and baby carrots with the leaves trimmed off and cook ensuring to turning often till they start tendering.

  2. Add the shredded kale leaves and cook together adding black pepper and sea salt to taste till the leaves start slightly shrinking/cooking ensuring to coat and turn evenly.

  3. Plate and Serve!
