Portobello, Gruyere and Farmhouse Cheddar Bake

Portobello Mushrooms, (4 caps) ‡
Gruyere Cheese, grated (1 cup) ‡
Farmhouse Cheddar, grated (1 cup) ‡
Garlic, finely chopped (2 cloves) ‡
Spinach, finely chopped (2 cups) ‡
Olive Oil (1 tbsp)
Sea Salt, to taste
Black Pepper, to taste

Preheat oven to 200 C. Clean the mushrooms with a damp cloth and remove the stems and the gills. Rub the olive oil onto the outside of the mushrooms.
In a mixing bowl mix the gruyere, farmhouse cheddar, garlic and spinach and add salt and pepper to taste. Mix well till combined.
Fill the caps with the mixture evenly and place the portobellos in the oven.
Bake for 10-15 minutes at 200 C till the cheese melts and bubbles and the portobello mushrooms cook through.
