Morning Glory Stir Fry

Ingredients

  • Morning Glory Spinach (2 cups)

  • Garlic, chopped and mashed (5 cloves)

  • Onions, chopped (1 pc)

  • Parsnips, sliced round (2 pcs)

  • Chilies, sliced (3 pcs)

  • Soya Sauce (1 tbsp)

  • Coconut Oil (1 tbsp)

  • Lemon Juice (1 tbsp)

  • Sea Salt, to taste

  • Black Pepper, to taste

Method

Serves 2

  1. Blanch the spinach in boiling water for just a minute to keep it crunchy and run under cool water. Slice the stems into 2 inch pieces.

  2. Heat the oil in shallow pan and the garlic and onions. Cook till they start browning.

  3. Add the spinach, parsnips, chilies, soya sauce, lemon juice as well as salt and black pepper to taste.

  4. Cook for a couple of minutes till the spinach becomes the perfect combination of tender-crisp and is coated in the sauce. Remove from the heat.

  5. Serve with some steamed jasmine rice and enjoy!
