Vegan Pesto Pasta Salad

  • Vegan Basil Pesto (6-8 tbsp)

  • Gluten Free Rotini Pasta (2 cups)

  • Fresh Green Peas (1 cup)

  • Cherry Tomatoes, Chopped (1 cup)

  • Baby Spinach (1/2 cup)

  • Arugula (1/2 cup)

  • Walnuts, toasted and chopped (1/4 cup)

  • Sea Salt, to taste

  • Black Pepper, to taste

Serves 2

  1. Cook Pasta according to instructions, rinse with cool water and let drain and put aside for 10 minutes.

  2. Add pasta to a large salad bowl and toss together with the peas, cherry tomatoes, baby spinach, arugula and walnuts adding olive oil if needed.

  3. Add in the pesto and coat liberally, adding the desired quantity of pesto.

  4. Plate and Serve!
