Ingredients
Citrus Cider Vinaigrette (1/4 cup) ‡
Brown Rice, Cooked (2 cups)
Beetroot, steamed and chopped (2 pcs) ‡
Cauliflower, steamed or roasted (1 pc) ‡
Baby Spinach (1 cup) ‡
Onion, thinly sliced (1/4 pc) ‡
Sauerkraut (1/2 cup) ‡
Raw Pumpkin Seeds (1 tbsp)
Walnuts, chopped (1/4 cup)

Method
Serves 2
Divide the rice, beetroot, cauliflower, baby spinach, onion, sauerkraut, pumpkin seeds and walnuts between 2 bowls.
Coat each bowl with the citrus cider vinaigrette and toss to mix well.
Serve and enjoy!
