Ingredients

  • Citrus Cider Vinaigrette (1/4 cup)

  • Brown Rice, Cooked (2 cups)

  • Beetroot, steamed and chopped (2 pcs)

  • Cauliflower, steamed or roasted (1 pc)

  • Baby Spinach (1 cup)

  • Onion, thinly sliced (1/4 pc)

  • Sauerkraut (1/2 cup)

  • Raw Pumpkin Seeds (1 tbsp)

  • Walnuts, chopped (1/4 cup)

Method

Serves 2

  1. Divide the rice, beetroot, cauliflower, baby spinach, onion, sauerkraut, pumpkin seeds and walnuts between 2 bowls.

  2. Coat each bowl with the citrus cider vinaigrette and toss to mix well.

  3. Serve and enjoy!
