Tomato Rosemary & Gruyere Baked Bell Peppers

  • Red Bell Peppers, halved (2 pcs)

  • Yellow Bell Peppers, halved (2 pcs)

  • Green Capsicum, halved (2 pcs)

  • Tomato Rosemary Sauce (2 cups)

  • Gruyere Cheese, grated (1 cup)

  • Parsley, chopped (4 tsp)

  • Sea Salt, to taste

  • Black Pepper, to taste

Serves 2

  1. Preheat an oven to 200C.

  2. Halve the bell peppers and stuff with the tomato rosemary sauce and the grated gruyere.

  3. Bake peppers until soft and cheese melted and bubbling about 20-35 minutes.

  4. Remove from oven, garnish with parsley, remaining gruyere, salt and pepper.

  5. Serve and Enjoy!
