Gut Friendly Stir Fry


Sun-dried Tomato & Pumpkin Sauce Stuffed Bittergourd

Ingredients

  • French Beans, halved (1/2 cup)

  • Carrots, cut into 2 inch size pieces (1/2 cup)

  • Mushrooms, thinly sliced (1/2 cup)

  • Water Chestnuts, peeled and halved (1/2 cup)

  • Garlic, peeled and thinly sliced (4 cloves)

  • Coconut Oil (2 tsp)

  • Black Pepper, to taste

  • Sea Salt, to taste

Method

Serves 2

  1. Heat 1 tsp of the coconut oil in a frying pan over medium heat. Add the sliced garlic and fry till slightly golden.

  2. Add the carrots, mushroom, and beans along with another tsp of oil and start to cook turning frequently. After the veggies start getting slightly tender add the water chestnuts and continue to cook till the veggies are well cooked adding salt and pepper to taste.

  3. Plate and Serve!
