Kale & Baby Spinach Stir Fry with Peanut Miso

  • Kale, shredded loosely (2 cups)

  • Baby Spinach (1 cup)

  • Peanuts, roasted & crushed (1/2 cup)

  • Miso Dressing (4-5 tbsp)

  • A2 Ghee (1 tsp)

  • Lemon, juiced (2-3 pcs)

  • Salt, to taste

  • Pepper, to taste

Serves 2

  1. Heat the ghee on medium heat in a skillet and then add the kale and baby spinach with salt, pepper and cook till it starts to wilt.

  2. Add the lemon juice, crushed peanuts and miso dressing and continue to cook for a further 1 minute.

  3. Plate and Serve!
