Mango Qunioa Salad

Seasonal Fruit Bowl with Mango Vinaigrette

Ingredients

  • Qunioa, cooked (1/2 cup)

  • Mango, diced (1 cup)

  • Cherry Tomatoes, halved (1/2 cup)

  • Onion, finely diced (1/4th pc)

  • Chilli, chopped (1 pc)

  • Lemon, juiced (1 pc)

  • Mango Balsamic Dressing (1-2 tbsp)

  • Salt, to taste

  • Pepper, to taste

Method

Serves 2

  1. Mix together the cooked quinoa with the mangoes, cherry tomatoes, onions, chilis, lemon juice and mango balsamic dressing.

  2. Plate and Serve!
