Broccoli and Peas Fritter with Goat Chevre

Ingredients

  • Fresh Green Peas, shelled (1 cup)

  • Broccoli, florets (1 cup)

  • Parsley, chopped (2 tbsp)

  • Fresh Turmeric, finely chopped (1 tsp)

  • Quinoa Flour (1/4 cup)

  • Chickpeas Flour (1/4 cup)

  • Lemon Juice (1 tsp)

  • Coconut Oil

  • Goat Cheese Chevre Classic, to taste

Method

Serves 2

  1. Pulse the peas and broccoli together for a rice like consistency.

  2. Mix the peas, broccoli, parsley, turmeric, quinoa and chickpeas flour with lemon juice and a little bit of water to make a sort of a dough and break into patties using the coconut oil to keep them together and assembled and to lightly coat them.

  3. Pan sear in coconut oil and add salt and pepper to tate.

  4. Serve with classic chevre goat cheese!
