Portobello, Shiitake & Broccoli Stir Fry Bowl

Seasonal Fruit Bowl with Mango Vinaigrette

  • Coconut Oil (1-2 tbsp)

  • Spring Onions, chopped (2-3 pcs)

  • Onions, chopped (1 pc)

  • Portobello, sliced (1-2 pcs)

  • Shiitake, sliced (1-2 pcs)

  • Broccoli, coarsely chopped (2 pcs)

  • Peas, (1 cup)

  • Sesame Oil (1 tsp)

  • Walnuts, chopped (1 cup)

  • Soy Sauce (3 tbsp)

Serves 2

  1. Toast the walnuts in a wok over medium-high heat and add ½ tbsp of soy sauce near the end of the toasting and stir well. Set Aside.

  2. In the same wok add some coconut oil and the onions and start cooking till translucent and transfer to the bowl with the walnuts.

  3. Increase the heat to high and add coconut oil, portobello, shiitake and some soy sauce and cook till ready, transferring to the same bowl when done with the walnuts and onions.

  4. Finally add some coconut oil, broccoli and cook till tender. Then transfer all the ingredients in the bowl set aside and add to the same along with fresh peas, sesame oil, soy sauce and spring onions and mix well.

  5. Plate and Serve!
