Roasted Veg Salad with Sun-dried Tomato Feta

  • Onion

  • Yellow Pumpkin

  • Baby Potatoes

  • Sweet Potatoes

  • Carrots

  • Parsnips

  • Rocket Arugula

  • Feta with Sun-Dried Tomatoes

  • Lemon Oil Dressing

  • Basil

  • Coriander

  • Parsley

  • Olive Oil

  • Black Pepper

  • Sea Salt

Serves 2

  1. Cut the onion, yellow pumpkin, baby potatoes, sweet potatoes, carrots and parsnips into chunks and coat well with some olive oil, sea salt and black pepper. Roast in a preheated oven for 45 mins.

  2. Mix the lemon oil dressing with the chopped basil, coriander, parsley to make the dressing.

  3. Remove the veggies from the oven and mix well with the dressing serving on a bed of rocket with the sun-dried feta added over the top.

  4. Plate and Serve!
