Kale, Chard & Micro-green salad


Sweet Potato Sliders

Ingredients

  • Apple Cider Vinegar, (1/2 cup)

  • Raw Honey (2 tsp)

  • Kale, (1 bunch, torn into bite size pieces)

  • Swiss Chard (1 bunch, torn into bite size pieces)

  • Salt (1/2 tsp)

  • Black Pepper, Crushed (1/2 tsp)

  • Dried Rosemary, (1/2 tsp)

  • Olive Oil (1/2 cup)

  • Raisins (1/3 cup)

  • Walnuts, toasted & chopped (1/3 cup)

  • Feta Cheese (6 ounces)

  • Beetroots, boiled, chopped (1/2 cup)

  • Mustard Micro-greens

  • Radish Micro-greens

  • Beetroot Micro-greens

Method

Serves 4

  1. Whisk the vinegar, honey, salt, pepper, and rosemary in a bowl until the honey has dissolved.

  2. Whisk in the olive oil until evenly blended.

  3. Place the kale, Swiss chard, microgreens, feta cheese, raisins, beetroots and walnuts into a bowl.

  4. Toss with the dressing to serve.
