Green Winter Salad


  • Baby Spinach (1 cup)

  • Kale, shredded (1 cup)

  • Oriental Mustard Greens (1 cup)

  • Green Apples, cored and sliced (2-3 pcs)

  • Pomelo, sliced (1 pc)

  • Pomegranates, peeled (1 cup)

  • Pecan Halves, toasted (1/2 cup)

  • Strawberries (1 punnet)

  • Goat Cheese (6 ounces)

  • Dijon Mustard (1 tbsp)

  • Raw Honey (2 tbsp)

  • Apple Cider Vinegar (3 tbsp)

  • Olive Oil (1/4 cup)

  • Salt (1/4 tsp)

  • Black Pepper, ground

  • Mixed Micro-greens (for garnish)

Serves 2

  1. Arrange apples, pecans, strawberries, pomegranate and sliced pomelo with the greens and goat cheese in a deep bowl.

  2. In a small mason jar, combine dressing ingredients and shake to mix and emulsify.

  3. Pour in over salad ingredients in the bowl and lightly toss to ensure even coating at all layers.

  4. Serve with a mixed micro-green garnish and enjoy.
